Sweet and Sour Fish

Purchase
Tilapia at the Market
(Arabic of market: Souk)

Usually costs
10 riyals/kilo; available
at the Al Batha, Riyadh.
At the Souk, usually, fish cleaning costs 1 riyal.

Prepare
ingredients for the sauce

3 clubs Garlic (ground)
1 Medium-sized Onion (Chopped)
1 Medium-sized Ginger (Chopped)
1 table spoon corn starch
2 cups of water
1 teaspoon salt
1 tablespoon of seasoning (Ajinomoto)
2 tablespoon sugar
1 medium-sized bell pepper (chopped)
and cooking oil (for frying the fish)

Procedure
of cooking
For Fish:

1. Heat the frying pan
2. Put the cooking oil with at least 1
minute to heat the oil in medium stove fire
3. Fry the Tilapia until it becomes brownish
Cooking oil products with No/Low
cholesterol are available in Saudi.
For sweet and sour sauce:

1. Heat the frying pan
with medium stove fire
2. Put cooking oil (4 tablespoons) wait
until it becomes hot
3. Put the garlic in the pan 'til it becomes brownish
4. Add onion and the ginger
5. Mix the cornstarch into a cup of water
then pour it on the pan until the bubbles disappear and sauce becomes
thick
6. Add the sugar, salt, seasoning (Ajinomoto)
7. Finally, add the bell pepper
8 .Wait for 1 minute and then...

Serve Hot...

(Arabic of Hot is "Har").
Good for 4 persons.
